Pumpkin Apple Oat Bread
Dry Ingredients:
1 and ½ cup Toats oat flour
1 cup flour (sub. Gluten-Free Flour if preferred)
1 tbs baking powder
1 tsp salt
1 tbs cinnamon
¼ to ½ tbs of the following (opt-in/out what you prefer):
nutmeg
clove
ginger
Wet Ingredients:
¼ cup milk (sub. plant-based milk for vegan)
1 cup pumpkin puree
¼ cup oil or butter
1 egg (sub. arrowroot or egg replacer for vegan)
1 tsp vanilla
1 cup chopped apples - set aside a few slices for topping
Instructions:
Set oven at 350
Mix wet ingredients and dry in separate bowels
Combine Wet into Dry
Pour into bread pan or ceramic pie tin
Top with sliced apples and pumpkin seeds before baking
Put in oven and set timer:
Bread pan set timer for 1 hr.
Ceramic pie tin set for 45 min.
Pairs well with (plant-based) butter, homemade apple sauce, and your favorite warming beverage.
