Pumpkin, Rosemary, Oat Flour Biscuits
Dry Ingredients:
2 ¼ cup Toats flour
1 Tbsp baking powder
½ Tsp salt
A dash of cinnamon, nutmeg, cloves
3 Tbsp of Rosemary
Optional - a large dash of Nutritional yeast, or parmesan
Wet Ingredients:
Combine 1 Tbsp lemon juice and ¾ cup milk (i used buttermilk but any milk or alt. Milk will work) - let sit.
Mix in ¼ cup pumpkin puree after milk and lemon juice sit
Instructions:
Set oven at 450
Mix dry ingredients together
In a separate bowl mix lemon juice and milk and let sit for 5 minutes then add in pumpkin puree
Combine wet and dry ingredients
Chop butter into pieces and mix into batter. Flaky butter in batter = Flaky biscuits
Use a spoon and create ½ inch balls of dough and place onto a greased pan
Bake for 12 - 14 minutes or until golden
Pairs well with homemade honey butter on a chilly afternoon.
